At first, Ashtyn joined the California track team as a walk-on, and after a tryout in the spring of his freshman year, he just joined the football team. Ashtyn moved up the depth chart to become the starting safety alongside Jaylinn Hawkins in the second half of the redshirt sophomore year.
Ashtyn was named to the Paul Hornung Award Watch List and ESPN analyst Mel Kiper rated him as the third-best safety prospect in the 2020 NFL Draft. In his senior season, Ashtyn had one fumble, two forced fumbles , four passes defensed, two interceptions and 55 tackles. Ashtyn finished his collegiate career with three sacks on defense, two forced fumbles, 12 passes defensed, 166 tackles and seven interceptions while returning two punts for 33 yards and 70 kicks for a touchdown and 1,604 yards.
As a senior, Ashtyn was named a second-team All-American and won the Pac-12 title in the 110-meter hurdles in track and field. In the 60-meter hurdles, Ashtyn was also named an NCAA Indoor All-American. In the 2020 NFL Draft, Ashtyn was selected by the New York Jets with the 68th overall pick. In exchange for a pick, the Jets previously traded defensive lineman Leonard Williams to the New York Giants.
Ashtyn recovered a forced fumble during a 34-28 loss by teammate Marcus Maye with Keenan Allen on the goal line and led the team with 12 tackles against the Los Angeles Chargers in Week 11. On December 12, 2020, Ashtyn was introduced to the game. injured reserve and placed on injured reserve on September 1, 2021. On October 2 Ashtyn was activated.
