Azzanni's coaching career began in 1999 when he worked at Valparaiso University as the wide receivers coach and served there for two seasons. Then from 2001 to 2002 Zach served at Bowling Green as a graduate assistant under head coach Urban Meyer. After Meyer left in 2003 to take a job as Utah's head coach, Zach remained at Bowling Green and served as receivers coach for four seasons. Zach then worked as an assistant head coach and wide receivers coach at Central Michigan University. Zach's CMU teams compiled a three-year record of 28–13, including three consecutive bowl appearances.

After the 2009 college regular season, Zach was recruited by Florida. Tim Tebow had a career-high 482 yards in the Gators' 51-24 win against Cincinnati in Zach's first game coaching the Gators – the 2010 Sugar Bowl – quarterback. In 2011 he went to work at Western Kentucky as the wide receivers coach and offensive coordinator for one season. Zach joined the University of Wisconsin as the wide receivers coach in 2012 for one season.

Zach then worked at the University of Tennessee for four years. Zach joined the Vols working as recruiting coordinator and wide receivers coach before being elevated to serve as wide receivers coach and running game coordinator in 2015. From 2014 to 2016 Tennessee went to three straight bowl games, averaging nearly 43 points per exit and winning each contest.

Zac was hired by the Bears to work for the 2017 season as their wide receivers coach. On January 22, 2018, Zach was hired by the Broncos to serve as the wide receivers coach. On February 20, 2023, Zach was hired by the Jets to serve as the wide receivers coach. In February 2024, the Steelers hired Zack to serve as their wide receivers coach.
