At the age of 17, Bobby dropped out of high school. He then took his first restaurant job at a pizzeria and Baskin-Robbins. Flay took a position as a salad maker at Joe Allen's restaurant in Manhattan's Theater District, where his father was a partner. After taking a short break to work at the American Stock Exchange, Bobby returned to the kitchen as the executive chef at Miracle Grill in the East Village. Working from 1988 to 1990, Flay caught the attention of restaurateur Jerome Kretchmer, who was looking for a Southwestern-style chef. He then offered him the position of executive chef at Mesa Grill, which opened on January 15, 1991. Shortly thereafter, Flay became a partner.
